Fall has always been my favorite time of year.  The cooler days, the smell of smoke in the air and the arrival of bright orange pumpkins contribute to the excitement of the season.  Growing up in west Texas added to the fun of fall with carnivals and events where you could always find wonderful homemade tamales for sale. 

My Roasted Pumpkin Tamales reflect the rich, earthy flavors of fall.  The hot, smokiness of southwestern spices add warmth to the coolness of the season while sweet spices combine with mellow pumpkin to add richness and portray the time of harvest.  This versatile dish works well as a savory accompaniment to roasted meat dishes or transforms into a sweet ending to any meal when paired with vanilla ice cream.
